- 1 lb chicken breast, cooked and shredded
- 1 package gnocchi
- 1 cup cream cheese
- 1 cup chicken broth
- 1 packet ranch seasoning
- 1 cup shredded cheddar cheese
- 2 cups spinach (optional)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, pour in the chicken broth, cream cheese, and ranch seasoning. Stir over medium heat until the cream cheese melts and blends smoothly.
- Add the cooked and shredded chicken to the pot. Cook for a few minutes until heated through, stirring occasionally.
- Add the gnocchi and cook for about 2-5 minutes until they float to the top.
- Stir in the shredded cheddar cheese and spinach (if using) until the cheese has melted and everything is combined.
- Taste and add salt and pepper according to preference. Stir well.
- Serve in bowls and garnish with chopped green onions.
Notes
For quicker preparation, use store-bought rotisserie chicken. You can also mix in vegetables like mushrooms or bell peppers for extra nutrition.
