Description

A delightful blend of tender chicken, fluffy gnocchi, and creamy cheese sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 package gnocchi
  • 1 cup cream cheese
  • 1 cup chicken broth
  • 1 packet ranch seasoning
  • 1 cup shredded cheddar cheese
  • 2 cups spinach (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, pour in the chicken broth, cream cheese, and ranch seasoning. Stir over medium heat until the cream cheese melts and blends smoothly.
  2. Add the cooked and shredded chicken to the pot. Cook for a few minutes until heated through, stirring occasionally.
  3. Add the gnocchi and cook for about 2-5 minutes until they float to the top.
  4. Stir in the shredded cheddar cheese and spinach (if using) until the cheese has melted and everything is combined.
  5. Taste and add salt and pepper according to preference. Stir well.
  6. Serve in bowls and garnish with chopped green onions.

Notes

For quicker preparation, use store-bought rotisserie chicken. You can also mix in vegetables like mushrooms or bell peppers for extra nutrition.
