Bread Batter:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

3/4 cup granulated sugar

1/2 cup vegetable oil

2 large eggs

1 tsp vanilla extract

3/4 cup milk

1 1/2 cups fresh or dried cranberries

Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. In another bowl, whisk sugar, oil, eggs, vanilla, and milk until smooth.

4. Gradually mix dry ingredients into wet ingredients until just combined.

5. Fold in cranberries.

6. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.

7. Pour half of the bread batter into the prepared pan.

8. Spread cream cheese mixture evenly over the batter.

9. Top with remaining bread batter and gently swirl with a knife.

10. Bake for 50–55 minutes until a toothpick inserted comes out mostly clean.

11. Cool completely before slicing.

Notes

Fresh cranberries provide the best tart contrast.

Tent loosely with foil if the top browns too quickly.
