- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup chopped walnuts or pecans (optional)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the vegetable oil and eggs until smooth, then add the grated carrots and nuts.
- Slowly pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the greased pan and spread evenly.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow to cool completely in the pan.
- Beat the softened cream cheese with powdered sugar and vanilla until smooth.
- Spread the cream cheese frosting evenly across the cooled bars.
- Cut into squares and serve.

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
