Delightful cream cheese bars that blend the flavors of traditional carrot cake with a creamy frosting, perfect for parties and snacks.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the vegetable oil and eggs until smooth, then add the grated carrots and nuts.
  4. Slowly pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the greased pan and spread evenly.
  6. Bake for 25-30 minutes, checking for doneness with a toothpick.
  7. Allow to cool completely in the pan.
  8. Beat the softened cream cheese with powdered sugar and vanilla until smooth.
  9. Spread the cream cheese frosting evenly across the cooled bars.
  10. Cut into squares and serve.
