Ingredients

2 cups fresh or frozen cranberries

1/2 cup granulated sugar

1 tbsp cornstarch

1 tsp orange zest

1 tbsp orange juice

1 1/2 cups all-purpose flour

1 cup rolled oats

3/4 cup brown sugar, packed

1/2 tsp baking soda

1/4 tsp salt

3/4 cup unsalted butter, melted

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a saucepan, combine cranberries, sugar, cornstarch, orange zest, and orange juice.

3. Cook over medium heat for 5–7 minutes until thick and jammy. Set aside to cool slightly.

4. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt.

5. Stir in melted butter and vanilla extract until crumbly.

6. Press two-thirds of the crumble mixture into the prepared pan to form the crust.

7. Spread the cranberry filling evenly over the crust.

8. Sprinkle the remaining crumble mixture over the top.

9. Bake for 30–35 minutes or until golden brown.

10. Cool completely before cutting into bars.

Notes

Substitute raspberries or blueberries for cranberries for a fruity twist.

Add chopped nuts to the crumble for extra crunch.
