  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream (or coconut milk for a lighter option)
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook for 6-8 minutes until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, melt the remaining butter and add the garlic and onion. Sauté until translucent, about 3-4 minutes.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and red pepper flakes, and let the sauce simmer for 5 minutes until slightly thickened.
  5. Return the chicken and drained pasta to the skillet. Toss to coat in the sauce, adding reserved pasta water as needed for consistency. Cook for another 2 minutes.
  6. Sprinkle with grated Parmesan and garnish with fresh parsley before serving. Enjoy warm!
