A delightful pasta dish featuring tender steak and a creamy, buttery cowboy butter sauce.
Ingredients

- 8 ounces pasta (fettuccine, spaghetti, or your choice)
- 1 pound steak (sirloin or ribeye, cut into bite-sized pieces)
- 1/2 cup unsalted butter
- 4 cloves garlic (minced)
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon fresh chives (chopped)
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper (to taste)
- Grated Parmesan cheese (for serving)
Instructions
- In a large pot, boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the steak pieces with salt, pepper, and smoked paprika.
- In a large skillet over medium-high heat, add a tablespoon of butter and let it melt. Add the steak pieces in a single layer and sear for about 3-4 minutes until browned. Flip and cook for another 2-3 minutes until cooked to your liking. Remove steak from the skillet and set aside.
- In the same skillet, reduce the heat to medium. Add the remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the cooked pasta to the skillet and toss to coat in the garlic butter sauce. Add the seared steak pieces, chopped parsley, chives, and red pepper flakes (if using). Toss everything together until well combined.
- Taste and adjust seasoning with more salt and pepper if needed.
- Remove from heat and let it cool slightly before serving.
Notes
Serve warm and top with grated Parmesan cheese and fresh herbs. Pairs well with a side salad or garlic bread.
