Description

A delightful casserole combining classic Irish colcannon with corned beef, featuring creamy mashed potatoes, tender meat, and crunchy cabbage.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup cooked corned beef, shredded
  • 1 cup cabbage, chopped
  • 1/2 cup green onions, sliced
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Paprika for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the mashed potatoes, shredded corned beef, chopped cabbage, sliced green onions, shredded cheese, and milk in a large bowl.
  3. Season the mixture with salt and pepper to taste, ensuring even distribution.
  4. Mix until everything is well combined for a smooth consistency.
  5. Transfer the mixture into a greased casserole dish and spread it evenly.
  6. Add small pieces of butter on top and optionally sprinkle with paprika.
  7. Bake for about 25-30 minutes or until golden and bubbly.
  8. Cool slightly before serving.

Notes
