- 1 cup cooked corned beef, shredded
- 1 cup cabbage, chopped
- 1/2 cup green onions, sliced
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup milk
- Salt and pepper to taste
- 1 tablespoon butter
- Paprika for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the mashed potatoes, shredded corned beef, chopped cabbage, sliced green onions, shredded cheese, and milk in a large bowl.
- Season the mixture with salt and pepper to taste, ensuring even distribution.
- Mix until everything is well combined for a smooth consistency.
- Transfer the mixture into a greased casserole dish and spread it evenly.
- Add small pieces of butter on top and optionally sprinkle with paprika.
- Bake for about 25-30 minutes or until golden and bubbly.
- Cool slightly before serving.
Notes
This dish is perfect for using up leftover corned beef. It can also be made ahead of time and refrigerated before baking.
