Description

A rich and creamy soup that replicates the famous Panera Broccoli Cheese Soup, perfect for any season.


Ingredients

  • 4 cups broccoli florets
  • 1 cup diced carrots
  • 1/2 cup diced onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and carrots to the pot. Cook until softened, about 4-5 minutes.
  3. Stir in the all-purpose flour and cook for an additional minute.
  4. Slowly whisk in the chicken broth and bring to a simmer, about 3-4 minutes.
  5. Add the broccoli florets and cook until tender, about 10 minutes.
  6. Stir in the heavy cream and shredded cheese until melted and smooth.
  7. Season with salt and pepper to taste and serve warm.

Notes

For a thicker soup, add more flour or let it simmer longer. Use fresh vegetables for the best flavor.
