- 4 cups broccoli florets
- 1 cup diced carrots
- 1/2 cup diced onion
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over medium heat.
- Add the diced onion and carrots to the pot. Cook until softened, about 4-5 minutes.
- Stir in the all-purpose flour and cook for an additional minute.
- Slowly whisk in the chicken broth and bring to a simmer, about 3-4 minutes.
- Add the broccoli florets and cook until tender, about 10 minutes.
- Stir in the heavy cream and shredded cheese until melted and smooth.
- Season with salt and pepper to taste and serve warm.
Notes
For a thicker soup, add more flour or let it simmer longer. Use fresh vegetables for the best flavor.
