Ingredients
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, room temperature
1 tsp vanilla extract
1 tsp coconut extract
1 cup coconut milk
1/2 cup shredded sweetened coconut
For the frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp coconut extract
2–3 tbsp heavy cream
1 1/2 cups shredded coconut (for coating and topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another large bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, mixing well after each addition.
5. Stir in vanilla and coconut extracts.
6. Alternate adding dry ingredients with coconut milk, beginning and ending with the dry mixture.
7. Fold in shredded coconut.
8. Divide batter evenly between pans and smooth tops.
9. Bake for 25–28 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool for 10 minutes, then transfer to a wire rack to cool completely.
11. For the frosting, beat cream cheese and butter until creamy.
12. Add powdered sugar and coconut extract, then mix until light and fluffy.
13. Frost cooled cakes and press shredded coconut onto the sides and top for a beautiful finish.
Notes
Use canned full-fat coconut milk for the richest flavor.
Add a pineapple layer between cakes for a tropical twist.
Toast the coconut for extra crunch and aroma.
