Description

Rich and delicious brownies made healthier with zucchini and almond flour, perfect for a quick dessert or snack.


Ingredients

  • 1 cup grated zucchini
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (vegan)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking pan by lining it with parchment paper.
  3. Mix the dry ingredients: almond flour, cocoa powder, baking soda, and salt in a large bowl.
  4. Combine the wet ingredients: grated zucchini, maple syrup, melted coconut oil, sugar, and vanilla extract in another bowl.
  5. Pour the wet mixture into the dry ingredients and stir until well-combined.
  6. Add the dark chocolate chips and gently fold them into the batter.
  7. Transfer the brownie mixture into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, checking for doneness with a toothpick.
  9. Cool the brownies in the pan for 10-15 minutes, then remove and let cool completely before cutting.
  10. Cut into squares and serve.

Notes

These brownies pair well with dairy-free ice cream or coconut whipped cream and can be topped with additional chocolate or nuts.
