Ingredients

1 1/2 lbs ground beef (85% lean)

1/2 cup breadcrumbs

1/2 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 egg

2 tbsp Worcestershire sauce

2 tbsp ketchup

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme

**Glaze:**

1/3 cup ketchup

2 tbsp brown sugar

1 tbsp Dijon mustard


Instructions

1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.

2. In a large bowl, combine breadcrumbs and milk. Let soak for 2–3 minutes until softened.

3. Add ground beef, onion, garlic, egg, Worcestershire sauce, ketchup, salt, pepper, and thyme.

4. Mix gently until just combined — don’t overmix or the meatloaf will be dense.

5. Transfer mixture to the loaf pan and shape into an even loaf.

6. In a small bowl, mix ketchup, brown sugar, and Dijon mustard to make the glaze.

7. Spread half the glaze over the top of the loaf.

8. Bake for 45 minutes, then spread remaining glaze on top and bake another 15 minutes (total 1 hour).

9. Let rest 10 minutes before slicing.

10. Serve with mashed potatoes and green beans for the ultimate comfort meal.
