Description

A delightful dessert with layers and a unique coconut-pecan frosting, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup evaporated milk
  • 1 cup granulated sugar (for frosting)
  • 3/4 cup butter
  • 1 teaspoon vanilla extract (for frosting)
  • 3 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and 2 teaspoons of vanilla extract. Mix until smooth.
  4. Carefully stir in boiling water.
  5. Divide the batter among prepared pans and bake for 30 to 35 minutes.
  6. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks.
  7. For frosting, combine evaporated milk, sugar, butter, and egg yolks in a saucepan over medium heat. Stir for about 10 minutes until thickened.
  8. Remove from heat and mix in remaining vanilla, coconut, and pecans.
  9. Layer the cooled cakes with frosting in between and coat the sides and top as well.
  10. Serve and enjoy at room temperature.

Notes

For a richer flavor, serve with vanilla ice cream or chocolate sauce. Garnish with chopped pecans or chocolate shavings.
