Ingredients
3 ripe bananas, mashed
1/3 cup melted butter
3/4 cup granulated sugar
1 large egg, beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups all-purpose flour
1/2 tsp cinnamon (optional)
1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a large mixing bowl, mash ripe bananas with a fork until smooth.
3. Stir in melted butter until combined.
4. Add sugar, beaten egg, and vanilla extract. Mix until smooth.
5. Sprinkle baking soda, salt, and cinnamon (if using) over the mixture and stir in.
6. Add flour and mix gently until just combined — do not overmix.
7. Fold in walnuts or chocolate chips if desired.
8. Pour batter into prepared loaf pan and smooth the top.
9. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
10. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas — the more spotted, the better the flavor.
For a healthier twist, replace half the butter with applesauce.
Wrap leftovers tightly and store at room temperature for up to 3 days, or freeze for up to 3 months.
