This Citrus Avocado Salad is sunshine in a bowl β a refreshing mix of juicy citrus, creamy avocado, and crisp greens tossed in a honey-lime vinaigrette. Itβs light, vibrant, and bursting with flavor β the perfect salad to wow your taste buds any time of year.
Ingredients
4 cups mixed greens (such as arugula, spinach, or romaine)
1 large orange, peeled and segmented
1 grapefruit, peeled and segmented
1 avocado, sliced
1/4 small red onion, thinly sliced
1/4 cup feta or goat cheese, crumbled
1/4 cup roasted pistachios or almonds
**Honey-Lime Vinaigrette:**
3 tbsp olive oil
1 tbsp honey
2 tbsp fresh lime juice
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
1. In a small bowl, whisk together olive oil, honey, lime juice, Dijon mustard, salt, and pepper to create the vinaigrette.
2. In a large salad bowl, arrange mixed greens as the base.
3. Add citrus segments, avocado slices, and red onion over the greens.
4. Sprinkle with feta (or goat cheese) and roasted nuts.
5. Drizzle the honey-lime vinaigrette over the salad.
6. Toss gently just before serving or serve with dressing on the side.
Notes
For extra sweetness, add a few slices of strawberries or pomegranate seeds.
