Ingredients

  • 2 cups warm water
  • 1 package active dry yeast
  • 1/4 cup granulated sugar
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup baking soda
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. In a large bowl, combine the warm water, yeast, and granulated sugar. Stir lightly and let it sit for about 5 minutes until bubbly.
  2. Add the all-purpose flour and salt. Mix until a dough forms, then knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Punch the risen dough down, divide it into 12 pieces, roll each into a long rope, and shape into pretzels.
  5. In a large pot, boil 10 cups of water and baking soda. Boil each pretzel for about 30 seconds, then remove and place on the baking sheet.
  6. Brush pretzels with melted butter, sprinkle with cinnamon sugar mixture, then bake for 12 to 15 minutes until golden brown.
  7. Allow to cool slightly before serving warm.
