- 1 cup Guinness beer
- 1 cup unsweetened cocoa powder
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 tablespoon instant espresso powder
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare two 9-inch round cake pans by greasing and flouring them.
- Simmer the Guinness and butter in a saucepan over medium heat until it comes to a simmer.
- Whisk in the cocoa powder until smooth.
- Combine the dry ingredients (flour, sugar, baking soda, salt) in a mixing bowl.
- Mix the warm Guinness mixture with the dry ingredients, adding eggs, sour cream, and vanilla extract.
- Divide the batter evenly between the cake pans and Bake for 30-35 minutes.
- Cool the cakes in the pans for 10 minutes, then turn them out to cool completely on wire racks.
- Make the ganache by heating the heavy cream and pouring it over the chocolate and espresso powder. Stir until smooth.
- Level the cakes if necessary, then Layer with ganache between and on top of the cakes.
- Serve sliced and enjoy!
Notes
Serve at room temperature. Garnish with berries or powdered sugar. Pair with whipped cream or ice cream.
