Description

A moist loaf that combines the rich flavors of chocolate and coffee with the natural sweetness of bananas.


Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup Dutch-process cocoa powder
  • 1.5 tsp instant espresso powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups mashed overripe bananas (about 3 large bananas)
  • 0.5 cup unsalted butter, melted and cooled
  • 0.75 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup semi-sweet or dark chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or cooking spray and line with parchment paper.
  3. Whisk together the flour, cocoa powder, espresso powder, baking soda, and salt in a medium bowl.
  4. Mash the bananas until smooth in a large bowl, then add the melted butter and whisk.
  5. Add the brown sugar, egg, and vanilla and whisk until smooth.
  6. Gently fold the dry ingredients into the wet ingredients with a spatula.
  7. Fold in the chocolate chips gently.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 55 to 65 minutes, checking for doneness with a toothpick.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use ripe bananas and avoid overmixing the batter.
