1/4 cup strawberry puree or strawberry jam

2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup freeze-dried strawberries, crushed

1 cup semi-sweet chocolate chips

1 tsp coconut oil (optional, for melting chocolate)


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large bowl, cream together butter and sugar until light and fluffy.

3. Beat in the egg, vanilla extract, and strawberry puree until smooth.

4. In a separate bowl, whisk together flour, baking powder, salt, and crushed freeze-dried strawberries.

5. Gradually mix dry ingredients into wet ingredients until combined.

6. Scoop dough onto prepared baking sheets, spacing evenly.

7. Bake for 10–12 minutes until edges are set.

8. Allow cookies to cool completely.

9. Melt chocolate chips with coconut oil if using, then dip half of each cookie into chocolate.

10. Place cookies on parchment paper and let chocolate set before serving.
