Ingredients
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder

1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 tsp vanilla extract
3/4 cup buttermilk
For the frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
1/3 cup strawberry puree or jam
1 tsp vanilla extract
Pinch of salt
For the garnish:
12 fresh strawberries
6 oz semi-sweet chocolate, melted
1 tsp coconut oil (optional, for shine)
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
3. In another large bowl, whisk sugar, oil, eggs, and vanilla until smooth.
4. Add dry ingredients alternately with buttermilk, mixing just until combined.
5. Divide batter evenly among cupcake liners (about 2/3 full).
6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool completely before frosting.
8. For the frosting, beat butter until creamy, then add powdered sugar, strawberry puree, vanilla, and salt.
9. Beat until light and fluffy; chill for 10 minutes if needed for firmness.
10. Dip strawberries in melted chocolate and place on parchment to set.
11. Frost cupcakes generously, then top each with a chocolate-covered strawberry.
