- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- 4 oz cream cheese, softened
- 2 tbsp sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, beat together the softened cream cheese, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla extract until smooth. Refrigerate the mixture.
- Cream together the softened butter, brown sugar, and white sugar in another bowl until light and fluffy. Beat in the egg and 1 teaspoon of vanilla extract.
- In a separate bowl, mix the flour, baking soda, and salt. Gradually mix into the wet mixture until just combined.
- Fold in the chocolate chips.
- Scoop about 1 tablespoon of cookie dough, flatten it, add 1 teaspoon of cheesecake filling, and cover it with dough to seal. Roll into a ball.
- Place on the baking sheet with 2 inches of space in between. Bake for 10 to 12 minutes or until golden around the edges.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chill cheesecake filling for easier assembly. Store cookies in an airtight container.
