Description

These delightful cookies combine the rich flavors of chocolate chip cookies and creamy cheesecake into irresistible bites of happiness.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 4 oz cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat together the softened cream cheese, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla extract until smooth. Refrigerate the mixture.
  3. Cream together the softened butter, brown sugar, and white sugar in another bowl until light and fluffy. Beat in the egg and 1 teaspoon of vanilla extract.
  4. In a separate bowl, mix the flour, baking soda, and salt. Gradually mix into the wet mixture until just combined.
  5. Fold in the chocolate chips.
  6. Scoop about 1 tablespoon of cookie dough, flatten it, add 1 teaspoon of cheesecake filling, and cover it with dough to seal. Roll into a ball.
  7. Place on the baking sheet with 2 inches of space in between. Bake for 10 to 12 minutes or until golden around the edges.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill cheesecake filling for easier assembly. Store cookies in an airtight container.
