Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup milk
1/2 cup vegetable oil
1 tsp vanilla extract
1/2 cup hot water
1 cup cherry pie filling
Chocolate frosting for topping
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
3. Add egg, milk, oil, vanilla, and hot water; mix until smooth.
4. Fill cupcake liners halfway with batter.
5. Spoon a small amount of cherry pie filling into the center of each.
6. Top with remaining batter until liners are about 3/4 full.
7. Bake for 18–22 minutes until cupcakes are set.
8. Cool completely before frosting.
9. Pipe or spread chocolate frosting on top and serve.
Notes
Do not overfill cupcakes to prevent overflow.
Fresh cherries can be cooked down with sugar as a filling substitute.
Cupcakes taste even better the next day once flavors meld.
