Description

A comforting and hearty dish featuring tender chicken, flavorful rice, and a creamy base, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breasts, cubed
  • 2 cups rice (white or brown)
  • 4 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the cubed chicken, rice, chicken broth, cream of mushroom soup, mixed vegetables, onion, garlic, salt, pepper, and paprika in a large casserole dish.
  3. Stir well to combine all ingredients.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Remove the foil, stir the mixture, and top with shredded cheese if desired.
  6. Bake uncovered for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
  7. Let it sit for a few minutes before serving. Enjoy!
