- 1 lb chicken breasts, cubed
- 2 cups rice (white or brown)
- 4 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the cubed chicken, rice, chicken broth, cream of mushroom soup, mixed vegetables, onion, garlic, salt, pepper, and paprika in a large casserole dish.
- Stir well to combine all ingredients.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil, stir the mixture, and top with shredded cheese if desired.
- Bake uncovered for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
- Let it sit for a few minutes before serving. Enjoy!
