Ingredients

2 large boneless, skinless chicken breasts (halved horizontally)

1 cup all-purpose flour

2 large eggs, beaten

1 1/2 cups Italian breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1/2 tsp dried oregano

Salt and black pepper to taste

1/4 cup olive oil (for frying)

1 1/2 cups marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan (for topping)

Fresh basil, for garnish

Cooked spaghetti or linguine, for serving


Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with foil.

2. Pound chicken breasts to 1/2-inch thickness between sheets of plastic wrap.

3. Season both sides with salt and pepper.

4. Prepare dredging station: one bowl with flour, one with beaten eggs, and one with breadcrumbs, Parmesan, garlic powder, and oregano mixed together.

5. Dip each chicken piece into flour, then egg, then breadcrumb mixture, pressing to adhere.

6. Heat olive oil in a large skillet over medium heat. Fry chicken for 3–4 minutes per side until golden brown. Transfer to paper towels to drain.

7. Spread a thin layer of marinara sauce on the baking sheet. Place fried chicken on top.

8. Spoon marinara sauce over each piece, then top with mozzarella and Parmesan cheese.

9. Bake for 12–15 minutes, until cheese is bubbly and golden.

10. Garnish with fresh basil and serve over pasta.

Notes

Use freshly grated cheese — pre-shredded versions melt less smoothly.

Fry in olive oil for that authentic Italian flavor.

Finish under the broiler for extra bubbly, golden cheese.

Pat the chicken dry before dredging to ensure crispiness.

For a lighter version, bake instead of pan-fry.

Serve with garlic bread and a glass of red wine for the full experience!
