These Chicken Fajitas are sizzling, juicy, and packed with flavor — tender strips of marinated chicken seared with colorful bell peppers and onions. Perfect for taco night or a fun family dinner, they’re quick, customizable, and absolutely mouth-watering.
Ingredients
1 1/2 lbs boneless, skinless chicken breasts, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
2 tbsp olive oil
2 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional)
1 lime, juiced
Salt and pepper to taste
8 small flour or corn tortillas
Optional toppings: sour cream, guacamole, salsa, shredded cheese, cilantro
Instructions
1. In a large bowl, whisk together olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper.
2. Add sliced chicken and toss to coat evenly. Marinate for at least 20 minutes (or up to 2 hours for best flavor).
3. Heat a large skillet or grill pan over medium-high heat.
4. Add chicken and cook for 5–6 minutes, until browned and cooked through. Remove from pan and set aside.
5. In the same pan, add sliced bell peppers and onions. Cook for 4–5 minutes until slightly charred and tender.
6. Return chicken to the pan and toss everything together for 1–2 minutes.
7. Serve hot with warm tortillas and your favorite toppings.
Notes
For restaurant-style fajitas, preheat the skillet until it’s sizzling hot before adding the chicken.
Add a splash of tequila or orange juice to the marinade for an extra zing.
Use boneless chicken thighs for juicier fajitas.
Serve on a cast iron skillet to keep them warm at the table.
