Ingredients
2 large chicken breasts
1 tbsp olive oil
Salt and pepper to taste
1 large head romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1 cup croutons
**Caesar Dressing:**
1/3 cup mayonnaise
2 tbsp lemon juice
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1 clove garlic, minced
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
Optional: 1–2 anchovy fillets, mashed
Instructions
1. Preheat grill or skillet over medium-high heat.
2. Brush chicken breasts with olive oil and season with salt and pepper.
3. Grill for 5–6 minutes per side, or until fully cooked (internal temp 165°F/75°C). Set aside to rest, then slice.
4. In a small bowl, whisk together all dressing ingredients until smooth and creamy.
5. In a large bowl, toss chopped romaine with dressing until lightly coated.
6. Add sliced chicken, croutons, and Parmesan cheese.
7. Toss gently and serve immediately, or plate individually for a bistro-style presentation.
Notes
For the best flavor, grill or sear the chicken for that smoky, charred touch.
Use freshly grated Parmesan — it makes a huge difference.
Make your own croutons by toasting cubed bread with olive oil and garlic.
