- 3–4 tablespoons oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pound ground beef
- 1 packet taco seasoning
- Water, as directed on taco seasoning packet
- 8 ounces Mexican shredded cheese
- Optional toppings: pico de gallo, guacamole, sour cream
Instructions
- Prepare the Potatoes: Begin by washing and peeling your russet potatoes. Chop them into small cubes.
- Season the Potatoes: In a large bowl, toss the diced potatoes with oil, salt, pepper, garlic powder, and onion powder.
- Air Fry the Potatoes: Preheat your air fryer to 400°F (200°C) and cook the seasoned potatoes for 18-20 minutes, shaking the basket 2-3 times.
- Cook the Ground Beef: Heat a skillet over medium heat, add the ground beef, and cook until browned. Drain excess grease.
- Add Taco Seasoning: Stir in the taco seasoning along with the water, and let it simmer as the potatoes finish cooking.
- Assemble the Dish: Layer the crispy potatoes on a serving plate, top with seasoned ground beef, and sprinkle on the shredded cheese.
- Garnish: Add any additional toppings you like, such as pico de gallo, guacamole, or sour cream.
Notes
For a vegetarian version, replace ground beef with black beans or a plant-based meat alternative.
