Description

A comforting casserole that combines lean ground beef, creamy cheese, and fluffy rice for a delicious weeknight meal.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease the 9×13-inch baking dish with cooking spray or butter.
  3. Brown the beef and onion in a large skillet over medium heat for 5-7 minutes, draining excess fat.
  4. Add the minced garlic, cooking for an additional 30 seconds.
  5. Whisk together cream of mushroom soup, milk or broth, paprika, salt, and pepper in a separate bowl.
  6. Combine the cooked rice, beef mixture, half of the shredded cheese, and sauce in the prepared baking dish.
  7. Top with remaining cheese and cover with aluminum foil. Bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
  9. Garnish with parsley, slice, and serve hot.

Notes

This casserole makes excellent leftovers and can be customized with different vegetables or spices.
