- 1 tablespoon olive oil
- 6 ounces boneless skinless chicken, cut into bite-sized pieces
- 4 bell peppers, sliced
- 1 small onion, sliced
- 1 package fajita seasoning mix
- 1 cup sour cream
- 4 ounces cream cheese, softened
- 2 cups cheddar cheese, grated
- To taste: optional toppings (avocado, guacamole, sour cream, salsa)
Instructions
- Preheat the oven to 350°F.
- Cook the chicken in a skillet with olive oil over medium heat until fully cooked and golden brown, about 5-7 minutes.
- Sauté the sliced onions and bell peppers in the same skillet for about 5 minutes.
- Combine the cooked chicken with the sautéed vegetables, fajita seasoning, sour cream, and cream cheese.
- Assemble the mixture in a baking dish and top with grated cheddar cheese.
- Bake for 10-15 minutes, or until cheese is bubbly and golden.
- Remove from oven and let cool slightly before serving.
