Description

A hearty and satisfying casserole featuring ground beef, fresh vegetables, and creamy sauce baked atop fluffy biscuit dough.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix, like Bisquick
  • 1 cup Water
  • Cooking Spray, like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat the oven to 350℉ (175℃).
  2. Cook the ground beef in a large skillet over medium-high heat until no longer pink, and drain excess fat.
  3. Prepare the biscuit dough by mixing biscuit mix and water in a bowl, then spread into a sprayed casserole dish and bake for 5-8 minutes.
  4. Cook the chopped onions and red bell pepper in the skillet with the beef for about 4 minutes.
  5. Add taco seasoning to the beef mixture and remove from heat.
  6. Assemble the layers by spreading the beef mixture atop the baked biscuit layer.
  7. Prepare the sour cream mix in another bowl, combining sour cream, mayonnaise, green chiles, cheese, and garlic powder.
  8. Spread the sour cream mixture over the beef layer.
  9. Add spoonfuls of salsa and sprinkle remaining cheese on top.
  10. Bake uncovered for about 30 minutes until hot and bubbly.
  11. Serve once cooled slightly, garnishing with parsley if desired.
