Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan lined with parchment paper.
- Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl and whisk until well mixed.
- Beat the eggs and sugar in a large mixing bowl until thick and pale, about 3-5 minutes using an electric mixer.
- Mix the dry ingredients into the egg mixture until just combined to avoid over-mixing.
- Fold in the grated carrots and chopped walnuts or pecans.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 13-15 minutes until golden brown and a toothpick comes out clean.
- Prepare a clean kitchen towel dusted with powdered sugar.
- Invert the cake onto the towel after baking and gently peel off the parchment paper.
- Roll the cake up with the towel inside and let it cool completely in this position.
- Beat the cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.
- Unroll the cooled cake gently and spread the cream cheese filling evenly, then re-roll the cake without the towel.
- Wrap the rolled cake in plastic wrap or parchment paper and refrigerate for at least 1 hour before slicing.
Notes
For best results, use freshly grated carrots and consider adding your favorite nuts or adjusting spices to taste.
