Description

A delightful rolled carrot cake filled with creamy cream cheese frosting and warm spices, perfect for any occasion.


Ingredients

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a jelly roll pan lined with parchment paper.
  2. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl and whisk until well mixed.
  3. Beat the eggs and sugar in a large mixing bowl until thick and pale, about 3-5 minutes using an electric mixer.
  4. Mix the dry ingredients into the egg mixture until just combined to avoid over-mixing.
  5. Fold in the grated carrots and chopped walnuts or pecans.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 13-15 minutes until golden brown and a toothpick comes out clean.
  8. Prepare a clean kitchen towel dusted with powdered sugar.
  9. Invert the cake onto the towel after baking and gently peel off the parchment paper.
  10. Roll the cake up with the towel inside and let it cool completely in this position.
  11. Beat the cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.
  12. Unroll the cooled cake gently and spread the cream cheese filling evenly, then re-roll the cake without the towel.
  13. Wrap the rolled cake in plastic wrap or parchment paper and refrigerate for at least 1 hour before slicing.

Notes

For best results, use freshly grated carrots and consider adding your favorite nuts or adjusting spices to taste.
