- 1 cup cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup breadcrumbs
- 1/4 cup flour
- 2 eggs, beaten

Instructions
- Begin by cooking your chicken if it’s not already prepared. You can use rotisserie chicken for convenience; just shred it into small pieces.
- In a large mixing bowl, combine the shredded chicken, buffalo sauce, and mozzarella cheese. Mix everything together until all the ingredients are well combined.
- Prepare a breading station. Place the flour in one bowl, the beaten eggs in a second bowl, and the breadcrumbs in a third bowl.
- Take a small amount of the chicken mixture and form it into a stick shape, about the size of your finger. Make sure it’s compact so it holds together during cooking.
- Dredge each stick in the flour, making sure to coat it completely. Shake off any excess flour, then dip it into the beaten eggs, ensuring it’s fully covered. Finally, coat the stick with breadcrumbs, pressing gently so the crumbs stick well.
- In a frying pan, heat oil over medium heat. Once the oil is hot, carefully add the mozzarella sticks in small batches. Fry them until they are golden brown on all sides, turning them occasionally for even cooking. This should take about 2-3 minutes per side.
- If you prefer a healthier option, you can bake the mozzarella sticks. Preheat your oven to 400°F (200°C) and place the coated sticks on a baking sheet lined with parchment paper. Bake for 15-20 minutes until they are crispy and golden brown.
- Once cooked, remove the sticks from the frying pan (or oven) and let them rest on a paper towel to absorb any excess oil. Serve hot with ranch or blue cheese dressing for dipping.
