Ingredients

- 8 ounces spaghetti
- 2 cups broccoli florets
- 2 chicken thighs, boneless and skinless
- 1 cup light cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder
- Optional: grated parmesan
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder.
- Place them in a baking dish and bake for 25-30 minutes.
- Meanwhile, cook the spaghetti according to package instructions in salted water.
- In the last 3-4 minutes, add the broccoli florets to the pot.
- Drain the spaghetti and broccoli together, then return them to the pot.
- Shred the baked chicken thighs and add them to the pot along with the light cheese.
- Mix until the cheese is melted and everything is well coated.
- Serve hot with grated parmesan if desired.
Notes
Experiment with different cheeses and add more vegetables for variety.
