Description

A wholesome and easy dish combining chicken, broccoli, and spaghetti, perfect for busy nights.


Ingredients

  • 8 ounces spaghetti
  • 2 cups broccoli florets
  • 2 chicken thighs, boneless and skinless
  • 1 cup light cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder
  • Optional: grated parmesan

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder.
  3. Place them in a baking dish and bake for 25-30 minutes.
  4. Meanwhile, cook the spaghetti according to package instructions in salted water.
  5. In the last 3-4 minutes, add the broccoli florets to the pot.
  6. Drain the spaghetti and broccoli together, then return them to the pot.
  7. Shred the baked chicken thighs and add them to the pot along with the light cheese.
  8. Mix until the cheese is melted and everything is well coated.
  9. Serve hot with grated parmesan if desired.

Notes

Experiment with different cheeses and add more vegetables for variety.
