Description

A delightful morning treat blending fresh blueberries with a crunchy streusel topping, perfect for breakfast, brunch, or dessert.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder

  • 1 cup fresh blueberries
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy for about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the milk and vanilla extract until combined.
  4. Mix the flour, baking powder, and salt in another bowl.
  5. Combine the dry mixture with the wet mixture gradually, stirring gently until no dry flour remains.
  6. Fold in the fresh blueberries carefully.
  7. Pour the batter into the greased pan and spread evenly.
  8. Make the streusel topping by mixing brown sugar, ground cinnamon, and cold butter until crumbly.
  9. Top the cake with the streusel mixture.
  10. Bake for 40-45 minutes or until a toothpick comes out clean.
  11. Cool slightly in the pan before serving.
