Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with butter or cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time to the butter and sugar mixture, mixing well after each addition.
- Stir in the lemon juice, lemon zest, and vanilla extract.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Gently fold in the blueberries.
- Pour the batter into the greased loaf pan.
- Bake for 50-60 minutes, checking for doneness with a toothpick.
- For the glaze, mix powdered sugar with lemon juice until smooth.
- Let loaf cool for 10 minutes before transferring it to a cooling rack and drizzling with glaze.
