Description

A refreshing and satisfying tuna pasta salad, perfect for warm days or picnics.


Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 can (5 ounces) tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the vegetables and tuna by combining the drained tuna, halved cherry tomatoes, diced cucumber, and finely chopped red onion in a large bowl.
  3. Make the dressing by mixing mayonnaise, lemon juice, salt, and pepper in a separate bowl.
  4. Combine everything by adding the cooled pasta to the tuna and vegetable mixture, then pour the dressing over and toss gently.
  5. Garnish with fresh parsley if desired and serve immediately or refrigerate for later.
