- 8 ounces pasta (penne or rotini)
- 1 can (5 ounces) tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water.
- Prepare the vegetables and tuna by combining the drained tuna, halved cherry tomatoes, diced cucumber, and finely chopped red onion in a large bowl.
- Make the dressing by mixing mayonnaise, lemon juice, salt, and pepper in a separate bowl.
- Combine everything by adding the cooled pasta to the tuna and vegetable mixture, then pour the dressing over and toss gently.
- Garnish with fresh parsley if desired and serve immediately or refrigerate for later.
