Ingredients
1/2 cup unsalted butter
8 oz semi-sweet chocolate, chopped
3/4 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
2 tsp instant coffee granules or espresso powder
3/4 cup all-purpose flour
2 tbsp cocoa powder
1/4 tsp salt
For the frosting:
1/4 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp brewed espresso or strong coffee (cooled)
1/2 tsp vanilla extract
1 tbsp cocoa powder (optional, for mocha flavor)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. In a saucepan, melt butter and chocolate over low heat, stirring until smooth. Let cool slightly.
3. Whisk in granulated and brown sugars until glossy.
4. Add eggs one at a time, mixing well after each addition.
5. Stir in vanilla and coffee granules.
6. Fold in flour, cocoa powder, and salt just until combined.
7. Pour batter into prepared pan and smooth the top.
8. Bake for 25–28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
9. Cool completely before frosting.
10. For the frosting, beat butter, powdered sugar, espresso, vanilla, and cocoa powder until smooth and fluffy.
11. Spread evenly over cooled brownies and refrigerate for 15 minutes to set before slicing.
Notes
Add chocolate chips or walnuts for extra texture.
For a stronger coffee flavor, increase espresso powder to 3 tsp.
Store brownies covered in the fridge for up to 5 days.
