- 1/2 medium yellow onion, finely chopped
- 1/3 cup all-purpose flour
- 2 cups low-sodium chicken stock
- 2 cups whole milk

- 1 stalk celery, finely diced
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup extra shredded cheddar for garnish (optional)
Instructions
- Melt the butter in a large pot over medium heat.
- Sauté the onion for about 4 to 5 minutes, until soft and translucent.
- Add the flour and cook for another 1 to 2 minutes until lightly golden.
- Pour in the chicken stock while whisking constantly to prevent lumps.
- Season the mixture with salt and black pepper to taste.
- Add the diced celery and chopped broccoli, bring to a gentle boil, then reduce heat to a simmer and cook for about 12 to 15 minutes.
- Incorporate the whole milk and simmer for another 2 to 3 minutes.
- Add the freshly shredded cheddar cheese in small handfuls, stirring until fully melted.
- Final taste test and adjust seasoning with more salt and pepper if needed.
Notes
