Ingredients
1 lb beef sirloin or tenderloin, thinly sliced
2 tbsp olive oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
1 tbsp all-purpose flour
1 cup beef broth
1 tbsp Dijon mustard
1/2 cup sour cream
1/2 cup heavy cream (optional for richness)
1 tsp Worcestershire sauce
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
12 oz egg noodles, cooked
Instructions
1. Season beef with salt and pepper.
2. Heat 1 tbsp oil in a large skillet over medium-high heat. Add beef in batches and sear for 1–2 minutes per side. Remove and set aside.
3. Add remaining oil to the skillet, then sauté onions for 2–3 minutes until softened.
4. Add mushrooms and cook until browned and any liquid evaporates.
5. Stir in garlic and cook for 30 seconds.
6. Sprinkle flour over the mixture and stir for 1 minute.
7. Gradually pour in beef broth while stirring to avoid lumps.
8. Add Dijon mustard, Worcestershire sauce, and simmer for 5 minutes until thickened.
9. Lower heat and stir in sour cream and cream (if using). Do not boil.
10. Return beef to the pan and cook gently for 2–3 minutes until heated through.
11. Serve hot over egg noodles and garnish with parsley.
