Ingredients
2 lbs chicken wings, split and tips removed
1 tbsp baking powder (NOT baking soda)
1 tsp salt
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp black pepper
2 tbsp olive oil
**For Sauce Options (choose one or mix and match):**
1/4 cup buffalo sauce + 1 tbsp melted butter (spicy)
1/4 cup honey + 2 tbsp soy sauce (sweet & sticky)
2 tbsp BBQ sauce + 1 tbsp honey (smoky)
2 tbsp garlic butter + parsley (garlic herb)
1 tbsp hot honey + chili flakes (sweet heat)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
2. Pat wings completely dry with paper towels — moisture prevents crispiness.
3. In a large bowl, toss wings with baking powder, salt, garlic powder, paprika, black pepper, and olive oil until evenly coated.
4. Arrange wings in a single layer on the rack.
5. Bake for 20 minutes, then flip and bake another 20–25 minutes, until golden brown and crispy.
6. Remove from oven and let rest 5 minutes.
7. Toss wings in your favorite sauce while still warm, or serve dry with dipping sauces.
8. Garnish with green onions, sesame seeds, or parsley for extra flair.
