- 1½ pounds beef tips (sirloin or stew meat), cut into 1-inch cubes
- 1 tablespoon vegetable or olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried herbs (optional)
- 1 tablespoon parsley, chopped (for garnish)
Instructions
- Sear the beef tips in a Dutch oven with hot oil until golden brown, about 3-4 minutes each side.
- Cook the onion in the same pot until softened, then add garlic.
- Create the gravy base by adding flour and gradually whisking in beef broth.
- Combine the beef, Worcestershire sauce, herbs, salt, and pepper, then simmer.
- Simmer covered on low heat for 25-30 minutes until the beef is tender.
- Adjust seasoning if necessary.
- Serve over creamy mashed potatoes and garnish with parsley.
