1 small onion, diced

2 cloves garlic, minced

1 packet taco or burrito seasoning

1/2 cup tomato sauce

2 cups cooked rice

1 cup black beans, drained and rinsed

1 cup shredded cheddar or Monterey Jack cheese

1/2 cup corn (optional)

4 large flour tortillas

Toppings: sour cream, salsa, guacamole, hot sauce, cilantro


Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add onion and cook for 2–3 minutes until softened.

3. Add garlic and cook another 30 seconds until fragrant.
