Ingredients
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco or burrito seasoning
1/2 cup tomato sauce
2 cups cooked rice
1 cup black beans, drained and rinsed
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup corn (optional)
4 large flour tortillas
Toppings: sour cream, salsa, guacamole, hot sauce, cilantro
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add onion and cook for 2–3 minutes until softened.
3. Add garlic and cook another 30 seconds until fragrant.
4. Add ground beef and cook until browned. Drain excess grease.
5. Stir in seasoning and tomato sauce; simmer for 3–4 minutes until thickened.
6. Warm tortillas in a dry skillet or microwave for easy rolling.
7. Layer rice, beef mixture, beans, cheese, and any extras in the center of each tortilla.
8. Fold in the sides, then roll tightly into a burrito.
9. Optional: toast seam-side down in a skillet for 1–2 minutes per side until golden and crisp.
10. Serve hot with sour cream, guacamole, and salsa.
