Ingredients

1 lb boneless, skinless chicken thighs or breasts, sliced thinly

1 tbsp vegetable oil

4 cloves garlic, minced

1 red bell pepper, sliced

1 small onion, sliced

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp fish sauce

1 tsp brown sugar

1 tsp chili flakes or 12 Thai chilies, minced

1/4 cup fresh basil leaves (Thai basil preferred)

1 tbsp lime juice (optional)

Cooked jasmine rice, for serving


Instructions

1. In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, brown sugar, and chili flakes. Set aside.

2. Heat vegetable oil in a large skillet or wok over medium-high heat.

3. Add garlic and stir-fry for 30 seconds until fragrant.

4. Add sliced chicken and cook for 5–6 minutes, stirring often, until browned and cooked through.

5. Add onion and bell pepper; stir-fry for another 2–3 minutes until slightly tender.

6. Pour the sauce mixture over the chicken and toss to coat evenly.

7. Stir in fresh basil leaves and cook just until wilted.

8. Remove from heat, add lime juice if desired, and serve hot over jasmine rice.

Notes

Use Thai basil for authentic flavor — its anise-like taste elevates the dish.

Add extra chilies for more heat, or tone it down with a drizzle of honey.
