A delightful and easy banana bread recipe, perfect for using up overripe bananas and a favorite among many.

- 1/2 cup unsalted butter (melted)
- 1 cup white granulated sugar
- 2 eggs (room temperature)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/4 tsp salt
- 4 medium bananas
- 1 cup chopped walnuts
- 1 tsp cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a bread baking dish.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add the eggs, sugar, melted butter, and vanilla extract to the mashed bananas and whisk until combined.
- Combine the all-purpose flour, baking soda, salt, and cinnamon (if using) in another bowl.
- Mix the dry ingredients into the wet mixture gradually, stirring gently until smooth.
- Fold in the chopped walnuts.
- Pour the batter into the greased baking dish.
- Bake for 55-60 minutes, checking for doneness with a toothpick.
- Cool the banana bread in the pan for a few minutes before transferring it to a wire rack.
Notes
Serve slices plain, toasted, or with butter/cream cheese. Store in an airtight container. Lasts 3-4 days at room temperature or can be frozen.
