- 10 chicken pieces (preferably thighs)
- 2.5 tsp salt
- 1.5 tbsp paprika
- 1 tbsp chicken seasoning
- 3 tbsp butter (unsalted)
- 1/2 cup red onion (finely diced)
- 1/2 cup parsley (chopped)
- 1.5 tbsp garlic (minced)
- 1/2 tsp red pepper flakes
- 1 cup chicken stock
- 1 tbsp lemon juice
- 1 cup parmesan (freshly grated)
- 1/3 cup cream
- 1/2 tsp dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Mix salt, paprika, and chicken seasoning in a bowl.
- Rub the spice mixture all over the chicken pieces.
- Heat the butter in a skillet over medium heat and cook the onion until translucent.
- Add parsley, garlic, and red pepper flakes, and sauté until fragrant.
- Pour in chicken stock and lemon juice, then stir in parmesan, cream, and thyme.
- Combine the seasoned chicken and sauce in a baking dish.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot, garnished with additional parsley if desired.
