Description
A delicious and hearty vegetarian lasagna filled with layers of cheese, vegetables, and a rich tomato sauce.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Spread 1 cup of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce.
- Spoon 1/3 of the ricotta mixture, followed by 1/3 of the spinach, and 1/3 of the mozzarella cheese.
- Repeat the layers twice more, ending with mozzarella on top.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for another 15 minutes until cheese is bubbly.
- Let it cool for 10 minutes before serving.
Notes
For extra flavor, add fresh basil or garlic to the ricotta cheese mixture.
