Instructions
- Prepare the Chicken Thighs: Start by cutting the boneless, skinless chicken thighs into 1-inch pieces. In a large mixing bowl, toss the chicken with cornstarch, kosher salt, and black pepper.
- Make the Marinade: In a separate bowl, whisk together the soy sauce, water, light brown sugar, sesame oil, and minced garlic.
- Heat the Skillet: Place a nonstick skillet over medium-high heat and add the extra virgin olive oil.
- Cook the Chicken: Carefully add the coated chicken pieces to the hot skillet. Sauté for about 2-3 minutes on each side until golden brown and cooked through.
- Add Onions and Jalapenos: In the same skillet, add the diced yellow onion and sliced jalapenos. Sauté for 4-6 minutes until softened.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet and pour the soy sauce mixture over it, stirring everything together.
- Serve: Spoon the hot chicken and sauce over a bed of cooked white rice and sprinkle sesame seeds on top for garnish.
